Looking for suggestions for hardware to mount solar panels on southern face of quonset hut.....

Ground mount instead?
No way ! Solid sandstone 8 inches under that soil. I can use the curvature of the outer wall for optimal sun angle for summer and winter with 2 separate rows of panels. Sun shines on southern face 90% of the time in southern Utah.
 
Any racking system should work. You will probably want to plan for the panels to lay landscape orientation because of the roof curve. This chews up racking length.

How many panels?

I prefer pole mounts for 6 or less on each. No holes in the roof is worth the extra cost to me.
 
Installed this last year, I know how many attachment points you have.

Shouldn't be too difficult to use some "L" angle and/or uni-strut to bolt directly to the (thousands of) bolts connecting the arches. As stated Landscape will probably work best. If you don't have panels yet, you could mock-up a template to see what the preferred dimensions would be to fit the arch best and then look for Panels in that range. Hopefully you haven't insulated yet to access the nuts on the inside.

The roof curve will allow me to mount optimum angles for summer & winter mounted directly to building. I will make my own brackets and mount to unistrut bolted directly to building. The southern side(righthand side) gets about 6 hours of direct sunlight per day.
