Update: I contacted SOK, got an answer right away:
The batteries were in storage mode. Beginning to charge them wakes them up. (TIL)
Both batteries communicate now, the real SOC is above 40 %.

@akumd The cabin is not accessible during winter, I'll see what's up when the season starts. There was more than average off-gassing, so I expect to find batteries that lost a lot of liquid. I'll tune down the voltages next time I go.
I ordered 2 SOK 12 V 100 Ah heated from SOKs Canadian site. I noticed that neither one of the two BMSes showed up in their app, although they are supposed to have Bluetooth. I then measured the voltage, and in both cases it is at 10.9ish volts.

If you are used to 3D printing functional parts (use higher temps and less cooling for better strengths), a 3D printed bus-bar carrier should work out from the mechanical side, though I would avoid PLA.
PETG or ABS would be my choice, though filament is flammable, and could ignite at high temps...
Does anyone know what the differences are between high quality fuses (like ANL or MEGA fuses from Blue Sea Systems) that sell for over 40 CA$ a pop, and low cost ANL fuses (from Amazon, 17 CA$ for 6)?

The configuration of the BMS says the "charging undertemp trigger delay" is 5 seconds, which checks out. What does not check out is the return condition 5°C, it clearly returns right away, maybe because of what you said about the MOSFETs.
