Maximizing solar controller volts & amps?

I have an EPever 100v 30A controller. As long as I stay under those values, is it safe to place more panels than the unit’s manual recommends for maximum solar panel wattage? Manual lists 390 watts maximum in panels.
Rounded off example using 100 Watt panels, 25V/5A rated:
3 in series, 4 of the series groups paralleled.
My math says 75V, 20A
But it would total 1200 watts!
Hence my confusion.
I’m not looking to go to this level or extreme, but what if I went over the 390 watt limit noticeably?
 
Please consult your manual. Most EPEVER manuals indicate a max 1.5X or 2.0X Maximum OUTPUT on the array input, i.e., if the MPPT can output 720W on a 24V system, the max you should put on it is 1.5X or 2.0X 720W.

Generally speaking, your approach follows, 1) don't exceed Voltage input limit, and 2) don't exceed battery output current on the PV input. This usually works. I would personally be okay with it, I would just want to know where I am with the manufacturer's recommendation to be fully informed.
