I am planing to utilize sol-ark 15 with almost 19000W of solar panels, 6 strings of 7x445W panels each and I am running in to issue of finding code complaint DC disconnect switch. Ideally I would like to see 12 P switch, but I may have to combine 6 strings in to 3, so I am looking for recommendation of 6P PV disconnect that can handle 500V DC and 30A.

Easiest solution would be to use multiple disconnects which is allowed by code in most cases, for outdoor use the IMO DC Solar Isolators are good choice, for indoor installation you will need to use a metal enclosed disconnect. Remember the sol-ark has a built in PV disconnect switch so no separate equipment disconnecting means is needed at the sol-ark. Also since the sol-ark only has 4 MPPTs combing some of the strings before the sol-ark is also an option.
