I have 2x EG4 6500ex inverters connected in parallel, and I'm finally testing them long-term.

I'm SUPER CONCERNED because I'm seeing massive voltage dips and spikes on the AC output all the way as low as 111v and as high as 129v.

Is anyone else seeing this? I bought these inverters in August 2022, delivered in September. I have not updated them to the latest firmware yet. Screenshot attached of the AC output just today...

You may want to update to the latest firmware. If you haven't updated firmware at all, you're probably on the original 79.63. There's been a lot of fixes since that version to help stabilize issues.

I never found a cause for it, EG4 took the inverters back.

This recent post may help, there are now options on how to bond N-G and it might correct this problem. https://diysolarforum.com/threads/eg4-6500ex-and-6000ex-flickering-lights-and-firmware.72004/ On my LV6548's I have one bonding screw in place but I do have a 3 pole double throw transfer switch so bonding to the system N-G bond is different than most. I'd start a discussion with Jarrett to fix your problem. It might be a hardware issue.
