Oh my god that interlock. You will want a 240v split phase inverter to connect to your generator input. Like the 6000XP or otherwise.

The Inkbird is the obvious suspect. Freezers and their control logic expect to be powered 24/7.

How exactly is the inkbird set up? Is it turning the inverter off too soon? Bypass that for a while and see what happens.
