Best option for 6-100w series/parallel wiring

Lot more to this than just wiring panels.
What are the controller specs. etc?
Granted at 600 watts the 2P2S config you have would work, but never assume.
 
I am guessing the 4210 is an Epever Tracer therefore it has a 100Voc limit. Do not know the Voc of your panels but for many 100w it is ~22vDC. So yes 3S2P would work with 66Voc.

However the larger proposed battery will be hard to keep charged if you draw it down by any great amount. 400ah at 12vDC is 4800Wh and your 600w system is likely to produce from 1.8kWh up to 3kWh in a sunny day. Even the 230ah if cycled 200ah worth would equal 2.4kWh/day. Likely your PV would get behind and the battery will end up discharged.

Yes, I understand... on another note, I think I might be able to squeeze in a couple of 250w (voc 22.8v). Would they play well with my 100w (voc 22.5v) panels?
 
If a 12v battery you would be overpaneld for a Epever 4210. If 12v and adding a second (same) battery you could switch to 24v and be safe.

They would work but a word of caution about 250w rated RV panels. *Many of them are not actually 250w but either 200w or less if you do the math. 1 square meter is anywhere from 200-230w at most. (20-23% efficiency)

One possibility is you parallel 2-100w panels to make a equivalent 200w panel. This then can be combined with a 250w panel though a small wattage penalty would happen if the amperage was lower on the equivalent 200w as compared to the 250w*. This would mean though you would need 3-250w* panels to create 3 strings to work with. 2p2P3S or 66Voc. 54Vmp with likely 22a. (1188w) The estimated penalty in this hookup would be 1350w-1188w=162w
