I want to log and monitor battery status with Grafana and Nagios. Is there any documentation on the protocol used on the serial port to read out battery levels, current, soc, ...?

Its the pylontech protocol. Go to github and search for "pylontech". You will find some libraries there.
As an alternative, connect the battery to some inverter or power manager (e.g. Victron Cerbo). The inverter / power manager will give you indirect access to the battery info e.g. via modbus-tcp.
