Can an EG4 18kpv be wired into a 200 Amp panel with a backfeed breaker along with an existing SolarEdge GTI which is also on a backfeed breaker? What is the reason for taking the existing system off the main panel if there are enough opening?

I am not an electrician but you issue is the rating of your main panel. You have to make sure feed from the grid plus the feed from your inverter(s) do not exceed the panel rating.
There is a 120% rule that total amperage of your solar + grid power can not exceed 120% of your main service panel rating.

UPS. The 18kpv can disconnect the grid and island when the grid goes down. Everything after the 18kpv stays powered. If you already have an ATS then it doesn't matter unless you start paralleling 18kpvs for more power.
