Flat roof installation in Netherlands - considering glass-glass, bifacial, manufacturer, dimensions

Bifaciality factor of 80+-5% means that if front side is capable of making 600W, then backside is capable of 80+-5% of that (450W-510W). And if you are now thinking that wow my 600W panels are actually going to produce over 1000W, well no. Maybe if you have two suns in your neighborhood 180 degree apart from each others... It's just that with better bifaciality you get better backside production no matter what the conditions are. In here with fresh snow on the ground I have witnessed about 30-35% backside gain, but usually it is closer to 5% only. On a bad weather with no sun to be seen, particularly when it's snowing heavily, you get to appreciate bifaciality.

Got my panels EXW and that was a hassle. Never again.

Bifaciality is mainly appreciated when there is enough space and reflection on the back side. Placing it flat on a pitched/sloped roof kills the bifaciality.

Well... You can get bifacials to work even roof installed, but you need to get that light under those panels. Actually I'm sure 20-25% gain can be achieved this way at first but probably fainting to 10-15% over time.
